This recipe tastes so good and its filled with healthy ingredients! Gotta try it out!
Ingredients:
1 tablespoons Olive Oil
1 large Onion, diced
1 clove Garlic, pressed
1/2 cup Green Bell Pepper, diced
1/4 pound Fresh Mushrooms, thinly sliced
3 large Tomatoes, diced
1 tablespoon Parsley, chopped
1/2 teaspoon Black Pepper
1/2 teaspoon Thyme
1/8 cup canola Oil
2 medium Eggplants, peeled and diced
1/2 tablespoon Seasoned salt
1/8 cup Parmesan Cheese
Preparation:
Preheat oven to 375F. Sautee eggplants in canola oil over medium heat until golden. Set aside. Sautee onions in large skillet w/olive oil for 3 mins. Add garlic and green bell peppers and sautee for 2 mins. Add mushrooms and sautee for 2 more mins. Add the rest of the ingredients and let simmer for 2 more minutes. Incorporate the eggplants and pour everytning into a casserole dish (sprayed with a little PAM) and sprinkle parmesan cheese over it. Bake until cheese is golden.
